Gin Tonic Cake with Bruni Collin’s

Ingredients

For the sponge base

60g caster sugar
60g self-raising flour
A pinch of salt

Lemon syrup

100g caster sugar
120ml water
30ml lemon juice

Lemon mousse

250ml milk
1 sachet lemon jelly
200ml lemon juice
1 can condensed milk (397g)
400ml double cream

Gin tonic jelly

6 gelatin leaves
100ml water
150g caster sugar
Juice of one lemon
120ml Bruni Collin’s gin
200ml tonic water

Method

Lemon syrup

In a saucepan, mix water, sugar, and lemon juice. Cook over medium heat until the sugar dissolves. Reserve in a bowl to cool down.

Sponge base

Beat eggs with sugar until fluffy. Fold in flour and salt.
Pour the batter into a cake tin and bake for about 12 minutes at 180°C, until golden. Let it cool in the tin.

Lemon mousse

Heat the milk and dissolve the jelly in it. Mix with condensed milk and lemon juice.
When the lemon cream is lukewarm, fold it into the whipped cream gently until well combined.
Soak the sponge base with the reserved lemon syrup and pour the prepared mousse on top.
Smooth the surface and refrigerate for at least 5 hours.

Gin tonic jelly

Soak gelatin leaves and dissolve them in hot water with sugar.
Add lemon juice, Bruni Collin’s gin, and tonic water.
Pour over the lemon mousse and refrigerate until set.
